Puff Pastry Spinach Squares

Ingredients:

1 box puff pastry

10 oz. Frozen chopped spinach

3 scallions, chopped

½ bunch parsley, chopped

½ lb. feta cheese, crumbled

3 eggs

black pepper to taste

garlic powder to taste

Procedure:

Place spinach, scallions, parsley and 1 tsp. salt. in strainer. Squeeze out all the water.

In a bowl, beat eggs, then add, black pepper, garlic powder and feta cheese.

Combine spinach and egg mixture with fork.

Roll out both sheets of the puff pastry to fit a 9x13 pan, place one sheet in pan.

Place spinach mixture over puff pastry, then cover with second sheet of puff pastry.

Brush with egg wash.

Make light slivers over top layer of puff pastry to the size of the squares you want to cut when done.

Bake at 375 o until pastry has risen and is golden brown.
