Family Style Hot Dogs with Red Beans and Rice

Ingredients:

1 tablespoon vegetable oil

1 medium onion, chopped

½ medium green bell pepper, chopped

2 cloves garlic, minced

1 can (14 ounces) red kidney beans, drained and rinsed

1 can (14 ounces) Great Northern beans drained and rinsed.

½ pound beef hot dogs, cut into ¼ inch thick slices or Polska Kielbsa sausage.

1 cup uncooked instant brown rice

1 cup vegetable broth

¼ cup ketchup

1 teaspoon Dijon mustard

Procedure:

Preheat oven to 350oF. Spray 13 x 9 inch baking dish with nonstick cooking spray.

Heat oil in Dutch oven over medium-high heat until hot. Add onion, pepper and garlic; cook and stir 2 minutes or until onion is tender.

Add beans, hot dogs or sausage, rice, broth, ketchup and mustard to vegetables; sir to combine. Pour into prepared dish.

Cover tightly with foil and bake 30 minutes or until rice is tender.
