1 pound package of Stir fry Chicken
1 teaspoon minced garlic
salt and pepper to taste
4 tablespoons extra-virgin olive oil
1 red pepper sliced into thin strips
1 head of broccoli, cut into florets
1 small summer squash or zucchini, cut into matchstick sizxe pieces or
1/2 inch slices
Place the chicken in a bowl wiht 1/2 teaspon of the garlic and salt and
peper. Mix and set aside for about 5 minutes whule you chop the
vegetables.
Heat 2 tablespoons of the oliv oil in frying pan over medium high heat
Cook chicken stiring frequently. After done put in serving dish and
cover to keep warm.
Saute the vegetables, remainign 1/2 taspoon of garlic and cook sitrring
frequently.
Combine when veggies are done to taste. Crispier vegies take about 5
minutes. Softer veggies take up to 8 minutes.
When I made this I put the mixture of a bed of white rice. It was soo
yummy.
