Here is a quiche type recipe that I make for breakfast. I will make it and then eat it for several days--with a glass
of OJ and a slice of toast, it is a great way to start my day...

Ingredients:
1 pkg frozen chopped spinach (thaw & squeeze out as much water as you can) 1/2 c cottage cheese (I use chive cottage
cheese) 2 tbsp minced onion 1/4 flour 4-6 eggs shredded/grated cheese (cheddar, jack, parmesan) chopped garlic assorted
veggies salt & pepper to taste
Procedure:
Mix eggs with flour until well blended. Add all other ingredients. Mix well. Pour into a pie plate that has been
sprayed with Pam, and bake at 350 for 35-40 minutes or until a knife inserted comes out clean.
When I make this,
I put whatever veggies I want in it--leftover or fresh, it really doesn't matter. I've even put leftover chicken or
turkey in it. Usually, I add a can of sliced mushrooms, some broccoli, roasted red peppers or fresh red or green peppers.
Sometimes in place of the minced onions I'll use scallions. In place of the shredded cheese I've used crumbled
feta cheese.
I love this recipe. You can put whatever you want into it. I've used dried minced onion and garlic
poweder in place of fresh stuff. It is a great way to get some veggies in the morning, plus some protein, which
fills you up longer.
